Oven-baked capon is a very traditional Christmas recipe. Here we present our personal version of this classic holiday dish, but with our special “made in Marisana” touch.
A capon is a chicken (rooster) that is castrated at a young age and raised specifically for consumption. This process gives it more tender, juicy, and flavorful meat, with infiltrated fat, which is why it is usually a typical and exclusive dish for celebrations such as Christmas.
All the ingredients and steps to follow are described below, so you can easily prepare this rather labor-intensive recipe and literally amaze all your guests, who will surely be licking their fingers.
Ingredients

1 capon chicken

1 tablespoon black pepper

1 tablespoon sea salt

1 head of garlic, peeled and crushed in a mortar

2 onions, peeled and sliced into strips

2 tablespoons baking powder

Pork fat or bacon, sliced
Stuffing

1 small coffee cup of chicken stock
-
1 small coffee cup of olive oil
-
1 small coffee cup of pine nuts
-
5 tablespoons of marijuana butter (our secret ingredient)

1 cup of chopped walnuts or another nut of your choice

1 chopped onion
-
1 chopped celery stalk
-
5 slices of toasted white bread, cut into small cubes

1 teaspoon black pepper
-
2 tablespoons chopped thyme
-
Minced beef and pork (to taste and quantity)
Preliminary step: Preparing our marijuana butter
To prepare our marijuana butter, we will only need a saucepan, a strainer, and a mold-type container to pour our mixture into.
The ingredients for its preparation are simply:

500 ml of water

250 g of butter

25–50 g of marijuana in small buds
Step-by-step preparation of the butter

First of all, thoroughly grind the marijuana.

Heat the water in the saucepan without letting it boil. Adjust the heat if necessary so that the water does not boil, thus preventing the THC in the previously ground marijuana from degrading.

Add the marijuana to the saucepan and stir the mixture for about 5 to 7 minutes.

Add the butter to the saucepan with the water and marijuana. Stir for approximately 30 minutes so that the butter melts and mixes well with the other ingredients.

Strain the mixture using the strainer to separate the vegetable matter and pour the resulting liquid into the chosen mold-type container.

Place the container with the strained liquid in the refrigerator. Once the mixture solidifies, it will be ready for consumption.
